Who doesn’t like a nice, warm, chewy peanut butter cookie? I suppose its a problem for those that are allergic to peanuts. I don’t know what I’d do if that was the case for me. A batch of these barely lasts the day when we make them. The house fills with that lovely peanut aroma while they bake. You can toss a handful of chocolate chips into the recipe if you like, making them that much more addictive. I know the recipe says to allow the cookies to cool on the counter after you take them out of the oven, but I highly doubt you’ll follow that part of the instructions!
Chewy Peanut Butter Cookies ~ Recipe
Ingredients
1⁄2cup brown sugar 1⁄2cup granulated sugar 1⁄2cup peanut butter (crunchy or creamy) 1⁄2cup butter 1 1⁄4cups flour 1 teaspoon baking powder 1⁄2teaspoon baking soda 1/2 teaspoon vanilla extract 1 egg
Preparation
Mix peanut butter, sugars and butter until blended
Add egg, baking powder and vanilla
Add flour and mix until combined and smooth
Roll dough into 1 inch balls
Place on a cookie sheet and press gently with a fork
Bake for about 8 minutes at 350f
Remove from oven, wait 1-2 minutes before moving the cookies onto a countertop or wire rack to cool
Devour the cookies
