Homestead Peanut Butter Cookies

Who doesn’t like a nice, warm, chewy peanut butter cookie?  I suppose its a problem for those that are allergic to peanuts.  I don’t know what I’d do if that was the case for me.  A batch of these barely lasts the day when we make them.  The house fills with that lovely peanut aroma while they bake.  You can toss a handful of chocolate chips into the recipe if you like, making them that much more addictive.  I know the recipe says to allow the cookies to cool on the counter after you take them out of the oven, but I highly doubt you’ll follow that part of the instructions!

Chewy Peanut Butter Cookies ~ Recipe

Ingredients

1⁄2cup brown sugar 1⁄2cup granulated sugar 1⁄2cup peanut butter (crunchy or creamy) 1⁄2cup butter 1 1⁄4cups flour 1 teaspoon baking powder 1⁄2teaspoon baking soda 1/2 teaspoon vanilla extract 1 egg

Preparation

  1. Mix peanut butter, sugars and butter until blended

  2. Add egg, baking powder and vanilla

  3. Add flour and mix until combined and smooth

  4. Roll dough into 1 inch balls

  5. Place on a cookie sheet and press gently with a fork

  6. Bake for about 8 minutes at 350f

  7. Remove from oven, wait 1-2 minutes before moving the cookies onto a countertop or wire rack to cool

  8. Devour the cookies
